Recipe: Pizza Rice Cakes

Ingredients:

  • 5-6 of any brown rice lightly salted or salt-free rice cake
  • 1/3 cup pizza sauce
  • ¼ cup sliced ripe olives
  • ¼ cup diced green bell pepper
  • ¼ cup sliced mushroom
  • 1/3 cup shredded mozzarella cheese

Preparation Instructions:

Place rice cakes on baking sheet and spread pizza sauce evenly on each one. Top with all other ingredients (feel free to experiment with different toppings!), cheese being the last on the very top. Bake at 400 for 10 minutes. YUM!
