Measure rice and cook according to directions (about 15 minutes).
While rice is cooking, preheat a large skillet over medium heat. Spray with nonstick cooking spray, add in diced chicken breasts.
Saute chicken until browned, about 5 minutes. Stir broccoli florets into the chicken, add ¼ cup of water and cover with a lid.
Let steam for 3-5 minutes or until broccoli is tender.
In a small bowl, combine honey, lemon juice, garlic and cornstarch.
Pour over the chicken and broccoli, and stir until sauce thickens. Remove from heat and enjoy!
