Preheat oven to 375 degrees.
Place non-stick (oven safe) cooling rack atop baking sheet, line bacon across rack.
Bake for 25-30 minutes or until bacon reaches desired texture.
Once finished, allow to cool on paper towels (pat away extra grease).
While bacon is cooling, pour chocolate into a microwave safe bowl. Microwave in 15-30 second intervals, stirring in between until chocolate is melted.
Dip bacon in chocolate and place on baking sheet lined with parchment paper.
Place in freezer for 10 minutes or until chocolate is hardened.
