Salads are so light and perfect for spring weather. Mixed with fresh fruit and protein, they are a great way to not only get your macronutrients in but your micronutrients, too! This salad has the perfect amount of healthy fats from the fresh avocado, and it provides a boost of antioxidants from the strawberries. It's a great staple meal with endless options for toppings. Ingredients
4ouncesgrilled steak
4cupsmixed greens
1ouncemediterranean feta cheese
1/2cupstrawberries, sliced
1/2avocado, diced
Optional garnish: sliced almonds
Homemade dressing (makes 8 servings):
1/2cuppomegranate balsamic (regular will work fine too!)
1/4cupolive oil
1-2teaspoonsapple cider vinegar
2teaspoonsminced garlic
1teaspoonhoney
salt & pepper to taste
Instructions
Preheat grill on medium to prepare steaks.
Season steaks with pepper & steak seasoning.
Grill steak to your desired cooking temperature.
Thinly slice steak and measure out 4 oz. (2 oz. per salad)
In a bowl, mix together pre-measured mixed greens, strawberries, feta, avocado and steak. Drizzle ⅛ serving of balsamic dressing.
