Spinach & Egg Breakfast Sandwich
- 2 slices Ezekiel bread (or any sprouted grain)
- 3 egg whites
- 1 whole egg (organic)
- Low-Moisture Part-Skim Mozzarella Cheese
- Hot sauce
Scramble eggs in pan on stove (low/med). Toast bread while eggs cook. Once eggs are halfway cooked, mix salt & pepper into eggs and add hot sauce. Once eggs are almost completely cooked, melt Mozzarella cheese over eggs. Place spinach on bottom slice and add egg/cheese mixture on top of spinach (the eggs will warm the spinach just right). Top with 2nd slice and enjoy!
