Pizza Rice Cakes

Pizza that doesn’t break your macro bank?!? OKAY! Enjoy pizza anytime with this quick, easy and delicious recipe. Pepperoni is always a fan favorite, but be sure to test out different toppings like turkey sausage, pesto, or mushroom and olive! Great snack for kids and adults alike…Pizza for all!

  • 6 brown rice cakes, salt free
  • 6 slices low sodium pepporoni
  • 1/3 cup pizza sauce
  • 1/3 cup skim mozzarella
  • 1/4 cup green bell pepper, diced
  • 1/4 cup black olives, sliced
  1. Preheat oven to 400 degrees.

  2. Dice vegetables.

  3. Layer pizza sauce on rice cakes.

  4. Sprinkle cakes with 2/3 mozzarella cheese.

  5. Layer with additional toppings.

  6. Sprinkle with remaining cheese.

  7. Bake for 10 minutes, or until cheese melts.

  8. Enjoy!
