Strawberry & Peppered Steak Salad

Salads are so light and perfect for spring weather. Mixed with fresh fruit and protein, they are a great way to not only get your macronutrients in but your micronutrients, too! This salad has the perfect amount of healthy fats from the fresh avocado, and it provides a boost of antioxidants from the strawberries. It's a great staple meal with endless options for toppings. Get creative with this one and add some pickled red onions or blue cheese crumbles. Delish!

Ingredients

  • 4 ounces grilled steak
  • 4 cups mixed greens
  • 1 ounce mediterranean feta cheese
  • 1/2 cup strawberries, sliced
  • 1/2 avocado, diced
  • Optional garnish: sliced almonds

Homemade dressing (makes 8 servings):

  • 1/2 cup pomegranate balsamic (regular will work fine too!)
  • 1/4 cup olive oil
  • 1-2 teaspoons apple cider vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon honey
  • salt & pepper to taste

Instructions

  • Preheat grill on medium to prepare steaks.
  • Season steaks with pepper & steak seasoning.
  • Grill steak to your desired cooking temperature.
  • Thinly slice steak and measure out 4 oz. (2 oz. per salad)
  • In a bowl, mix together pre-measured mixed greens, strawberries, feta, avocado and steak. Drizzle â…› serving of balsamic dressing.
  • Optional garnish: sliced almonds.
