Post Workout Breakfast Burrito

I love making breakfast burritos for my pre/post workout meals because they’re incredibly easy to throw together after a hard workout. Flour tortillas and liquid egg whites are perfect to fill your burrito because you’ll want ingredients that are low fat/low fiber so your muscles get all of that energy as soon as possible! (If you add extra veggies, just watch the fiber on those, too!) I chose to add raw spinach and bell peppers for an added crunch, but feel free to sautee these with your egg whites. The green dragon sauce makes this stuffed burrito super flavorful, with a little kick of heat!

Ingredients

  • 1 large flour tortilla
  • 3/4 cup egg whites
  • 1/4 cup bell pepper, chopped
  • 1.5 ounce grilled chicken breast
  • small handful spinach
  • pepper to taste
  • Optional toppings: salsa, Green Dragon Sauce

Instructions

  • Cook egg whites on a medium skillet on low heat.
  • Wrap egg whites, cooked rice and veggies in the tortilla.
  • Top with salsa or Green Dragon sauce, and enjoy!
